Need feedback regarding the local СЭС for a new cafe permit

Anyone else just had a run-in with the local санэпидстанция? My buddy's cafe just had their routine check and man, it was something. It's always such a rollercoaster – you need everything to be perfect, but you also get so stressed waiting for them.
